    Ingredients




    • 200 g spareribs




    • 100 ml BBQ spice




    • 2 cups barbecue sauce




    • fennel for garnish




    • 1 teaspoon black peppercorns




    • ½ teaspoon cumin seeds




    • ½ teaspoon coriander seeds




    • ½ teaspoon cardamom seeds




    • 1 teaspoon salt




    • 1 cup flat-leaf parsley, loosely packed




    • 5 chillies




    • 4 cloves garlic, chopped




    • 2 – 3 tablespoons lemon juice




    • ½ cup olive oil






    Method



    • Put the black peppercorns, cumin seeds, coriander seeds and cardamom seeds into a spice grinder.

      Grind until they turn into a coarse powder.

    • Put the ground spices, salt, chilli, parsley, peppers, garlic and lemon juice into a blender.

      Pulse until just broken up.

    • Add the olive oil and pulse until combined but still has texture. Taste and add more salt or lemon juice.

    • Lay the ribs on top of the rack in a single layer

    • Stir the mustard and brush the ribs on both sides.

    • Sprinkle the ribs with the BBQ spice brush with 1 cup barbecue sauce and bake in the oven for 1 hour.

    • Then cut between the bones to separate the individual ribs. Serve immediately with parsley sauce for dipping.
