Lamb chops smothered in a mint sauce – A taste from Greece

Need to whip up a mouth-watering meal in less than an hour? Try these lamb chops smothered in a mint sauce. This tasty meal will bring a flair from Greece to the dinner table that will have everyone lick their plates afterwards to savour the delicious sauce.


There is just something about lamb chops cooked on the bone. Meat with the bone usually has much more flavour than boneless meat. Furthermore, marinating the lamb in lemon, garlic and rosemary enhances the fragrance of this dish. Paired with the zesty lemon juice and you have a winner on its way to the dinner table.  


Mint sauce works excellently with lamb as the mint cuts through the fattiness of the lamb. Preparing your own mint sauce at home is super easy. Make this mint sauce once and you will never want to substitute the homemade version for the one from the groceries store. 


Serve the lamb chops with mint sauce with mashed potato or polenta. Remember to add some veggies of your choice for a balanced meal.

    Ingredients




    • 6 lamb chops




    • salt and pepper to season



    • Marinade


    • 2 tablespoons rosemary, chopped




    • 1 tablespoon origanum




    • 1 teaspoon smoked paprika




    • 2 tablespoons garlic, crushed




    • ¼ cup olive oil




    • juice of one lemon



    • Mint sauce


    • 40 g fresh mint




    • 4 tablespoons boiling water




    • 2 tablespoons white vinegar




    • 1 tablespoon sugar






    Method



    • Lamb chops

    • Season the chops with salt and pepper.

    • Mix the marinade ingredients together and rub over the chops.

    • Allow standing for 30 minutes to 1 hour in the fridge.

    • Heat the olive oil in a frying pan over medium-high heat.

    • Cook the chops on each side for 5 minutes, or how you like them done.

    • Mint sauce

    • De-stalk the mint and finely chop the leaves. You can also pop the mint leaves into a blender.

    • Add the mint to a heatproof bowl. Add the boiling water, sugar and vinegar and stir. Allow standing while you cook the chops.

    • Drizzle the sauce over the cooked chops.
